Pressed candy is also called powder sugar or tablet sugar, also known as soda sugar. The manufacturing mechanism of pressed candy is mainly a process in which the distance of granules or fine powder is reduced to produce enough cohesion by means of pressure to closely combine. The contact area between loose particles is very small and the distance is large. There is only cohesion within particles, but no adhesion between particles. There is a large gap between particles, and the gap is filled with air. After pressurization, the particles slide and squeeze tightly, the distance and gap between particles gradually narrow, the air gradually discharges, a number of particles or crystals are crushed, and the fragments are pressed to fill the gap. When the particles reach a certain pressure, the intermolecular attraction is enough to make the particles combine into a whole sheet.
